MEAL ONE: Chicken Hash with Sweet Potatoes and Soft-boiled Eggs
MEAL TWO: Steak Fajitas with Radish-and-Cucumber Salsa
MEAL THREE (2 Breakfasts): Huervos Rancheros & Chia Pudding with Berries and Granola
I have never been much of a cook. When I started maternity leave, I was determined to become more domestic before Benjamin arrived and I think I made banana bread once. Haha. I’m definitely a convenience kind of girl when it comes to food and it’s never been very convenient for me to plan meals with more than three ingredients (when I cook, it’s usually chicken, brown rice and broccoli). And then having to shop for everything… let’s just say it’s not a process I enjoy.
Enter: Sun Basket.
I’m clearly not your typical food blogger, so when the opportunity came to partner with Sun Basket for a review and giveaway (get excited!) I had to think about it. After looking at their site and quickly learning what they’re all about, it didn’t take long for me to say yes.
Sun Basket is a healthy meal kit service that delivers sustainably sourced, seasonal ingredients and easy, delicious recipes for cooking at home. You basically choose a delivery date on their site, pick the meals that are available for that delivery date and then they send you all the ingredients you’ll need to make those meals. My favorite part is they only send enough ingredients for what you’re actually going to use. I HATE buying spices and things at the store for a meal I’m going to make once, and then I never use those ingredients again. It feels like such a waste. And if you’re in that same boat, I’m telling you, Sun Basket is for you.
It’s also a great, not-so-typical gift idea for brides, moms-to-be, and busy moms in general. I thought I’d have all this time to experiment and try new hobbies while on maternity leave, but my goals hit a reality check when Benj actually got here. I barely have time to change my clothes each day (most days I don’t) so the thought of getting myself all the way to the grocery store is a complete joke. And I’m the same with clothes. I love the convenience of online shopping and doorstep delivery!
One thing I have been really focused on now that I’m a mom and I’m trying to get my body back in shape is choosing healthier foods. So it was nice to be able to choose from paleo, gluten-free and vegetarian options when reviewing my Sun Basket meal choices. My favorite of the three meals I made above was the Chicken Hash (meal one) and it’s now on our go-to dinner list. It was simple, healthy and SO delicious.
